summer tomato salad


This is a really yummy basic tomato salad I made using a really good tip from Jamie Oliver’s Mothership Tomato Salad recipe. The key is to use really beautiful chopped fresh tomatoes and to salt them heavily. This will draw out the water and leave you with lots of that intense tomato flavor.

For this salad, I chopped up a couple of roma tomatoes, tossed them in lots of salt and let them drain in a colander for a bit. Then I made an olive oil-balsamic vinegar dressing, added that in along with some chopped up basil, and gave the whole thing another toss. I topped it all off with some torn pieces of fresh mozzarella. So delicious!
